1 can(15oz) Azuki beans
7 tablespoons sugar
1 teaspoon salt
1/3 cup water
1/2 package Mochi

Adjusting Taste
It's a key element for the entire recipe to have the right taste with Azuki soup, a combination of sugar and salt. Adjust especially the amount of salt right to a point where sweetness of soup suddenly hits another level as you add another pinch of salt.


To prepare Azuki soup, using a mesh strainer, drain water off cooked Azuki beans. Beat the Azuki beans using a food processor for 30 seconds or until running- smooth.
In a saucepan, bring the Azuki bean paste and water. Boil over medium heat, Stir frequently to mix well. With a skimmer, occasionally skim off froth and scum from the surface.
Add sugar and salt. Boil with medium heat for about 5 minutes. Stir frequently to mix well.
Pre-heat toaster oven to 300F. Cut Mochi into 3.5" square pieces. Set aside.
Bake 2 pieces of Mochi for 8-10 minutes or until being golden brown.
Place 1 piece of Mochi in a bowl. Cover it with the Azuki soup.
