|To prepare Azuki soup, using a mesh strainer, drain water off cooked Azuki beans. Beat the Azuki beans using a food processor for 30 seconds or until running- smooth.|
|In a saucepan, bring the Azuki bean paste and water. Boil over medium heat, Stir frequently to mix well. With a skimmer, occasionally skim off froth and scum from the surface.|
|Add sugar and salt. Boil with medium heat for about 5 minutes. Stir frequently to mix well.|
|Pre-heat toaster oven to 300F. Cut Mochi into 3.5" square pieces. Set aside.|
|Bake 2 pieces of Mochi for 8-10 minutes or until being golden brown.|
|Place 1 piece of Mochi in a bowl. Cover it with the Azuki soup.|
